Quince Jelly
Quinces are part of the apple family and when made into Jelly it is ideally used for as a condiment, and as the star of the show on cheeseboards.
To produce this traditional jelly we crush the fruit, bring to the boil and simmer gently. This releases all the flavour and gives the jelly a wonderful pink colour. It is then transferred to our fruit press where the fruit is squeezed slowly to release the juice.
Serve with Manchego cheese to compliment the nuttiness or with blue cheese to balance out the sharpness. Serve alongside salty meats for a contrast against the jelly's sweetness.
